Part of my own self-care is trying to eat healthier. Last week we had these amazing chicken tacos with mango-avocado salsa. I cannot take credit for this dish. My husband found the recipe and even cooked. We had left over chicken and salsa, so we had quesadillas the next day and everything only got better. Later in the week, I made the salsa again since we still had some of the ingredients. Yes, you did read that correctly-I ate this dish 3 times in the course of about 6 days. The only changes I would make is to double the recipe. Make it easy on yourself and have two great meals without thinking you are eating leftovers. These are kid approved!
